Recently Hayden was interviewed by Restaurant & Cafe about his career as a chef, and how it has led to his position now as Head of Kitchen Operations.
His passion for people and cooking has taken him across the world and into some incredible jobs, which has given him the experience he has needed to lead 9 kitchens with a kitchen team of 55. How would Hayden describe his cooking style? “I’m a bit of a traditionalist with a modern twist. I like simple, clean, uncomplicated flavours with a touch of refinement.”
